The Easy Bake Unicorn Cookbook: No-Bake Mermaid Cheesecake

Like a true Belieber and an uncle extraordinaire, I went home for the summer to my sister’s house to take my niece and her friends to their first Justin Bieber concert. To discern who was most excited for the concert would be like trying to decide what is cooler—fresh water mermaids or saltwater mermaids. To set this party off in style (after dyeing my niece’s hair the perfect shade of mermaid blue), we set down to create a confection of our dreams.
This No-Bake Mermaid Cheesecake was a simple, easy classic she can use for the rest of her life.
Easy Bake Option:
Grab a pre-made graham cracker crust and a no-bake cheesecake mix from the store. Follow the instructions and then start at step 3 on the next page.

What You Need:
2 blocks 8 oz. cream cheese, softened
1 cup Sugar
2 cups Heavy cream
4 bottles Food coloring. Sky Blue, Teal, Purple & Pink
1 Curst Graham cracker (recipe on next page)
Step By Step:
Take your cream cheese out of the fridge and keep at room temperature. Use your hand mixer to beat 2 blocks of cream cheese alone first, then slowly add sugar until smooth! Cream cheese will become lumpy if it hasn’t been warmed.
Mix in 2 cups of heavy cream and beat until the mixture is stiff and forms peaks. I’d say at least 3 minutes.
Divide batter into 4 small bowls, and add several drops of food coloring to each bowl—sky blue, teal, purple, and pink. Mix well!
Take your crust and spoon in large portions of the colored mixtures, alternating colors until you’ve used all the mixture. We did a layer of blue and teal, and a layer of pink and purple.
Cover with sprinkles and place in the refrigerator for 6 to 8 hours, till cheesecake becomes firm.
Decorating Tips:
Before you are ready to take your cheesecake out of the fridge, prepare your whip cream. Using one small container of Cool Whip® from the store, stir in sky blue food coloring. Stir until whip cream becomes entirely sky blue and scoop it into a piping bag or frosting tool of your choice.
Remove cheesecake from the fridge add additional sprinkles and top with light blue dollaps of cool whip.
For extra fun, we also like to add giant white chocolate pearls to give it an extra special glow.
